Minty Quinoa Salad w/Dates
This salad is a favorite of my students. It’s almost like a dessert!
1 1/2 cups cooked Quinoa (rinse quinoa a few times)
1/3 cup chopped fresh Mint
1/4 cup chopped fresh Scallions
1/4 cup chopped dates
1/3 cup Pistachios or Walnuts (chopped about in 1/2)
Squeeze of lemon (just a little to brighten)
Salt & Pepper
Put all the ingredients together in a bowl except olive oil, lemon, salt & pepper.
Toss and squeeze a little lemon on, toss again. Add olive oil to taste and salt & pepper.
