Within the plant cell is an enzyme, myrosinase. It serves as a catalyst for the inner cell glucosinolates. This action only takes place by chewing or juicing and breaking open the plant cell. In the plant cell, anti-cancer elements are not formed until we chew them and break open the cell wall. (Juicing does this too). Now the ARE’s are activated and keep free radicals at a low level.
